Chocolate Mousse

Chocolate Mousse
2 egg yolks
2 cups dark chocolate
2 Tbsp unsalted butter
4 egg whites
2 ½ tablespoons granulated sugar
2 cups whipped cream
- In a chilled bowl, whip the cold whipping cream with sugar until soft peaks. In a separate bowl, whip the egg whites until stiff peaks.
- In a microwaveable bowl, heat the chocolate and butter at 30 second increments until melted, stirring after each 30 seconds. Add in the egg yolks and beat into the chocolate.
- Stir the whipped cream into the chocolate egg mixture. Gently fold the egg whites into the main mix with a spatula. (Careful to not mix.)
- Divide the mousse into serving cups and let refrigerate for 3+ hours to firm up.
