Chocolate Mousse

Chocolate Mousse

2 egg yolks

2 cups dark chocolate

2 Tbsp unsalted butter

4 egg whites

2 ½ tablespoons granulated sugar

2 cups whipped cream

  1. In a chilled bowl, whip the cold whipping cream with sugar until soft peaks. In a separate bowl, whip the egg whites until stiff peaks. 
  2. In a microwaveable bowl, heat the chocolate and butter at 30 second increments until melted, stirring after each 30 seconds. Add in the egg yolks and beat into the chocolate. 
  3. Stir the whipped cream into the chocolate egg mixture. Gently fold the egg whites into the main mix with a spatula. (Careful to not mix.) 
  4. Divide the mousse into serving cups and let refrigerate for 3+ hours to firm up.
